Lazy Kitty and Wicked Corn
Thought I would share a pic of our cat Tyson. He clearly has it rough. Obviously, we weren't cooking at that moment or his schozz would be in the air sniffing away. He would then follow said nose into the kitchen where he meow loudly or, much to our chagrin, leap on to the kitchen counter to try for a taste. Especially if anything dairy is involved. I've made the mistake of walking away from something with sour cream only to turn around and see him walking away licking his lips with a dollop of sour cream on his nose. Our culinary kitty.
We did brats on the grill tonight. More importantly, I made Sam the Cooking Guy's Blackened Corn Salad and it was wicked good. Flavors tumbling over flavors. We want to add black beans to the mix next. Here's the recipe:
Blackened Corn Salad(courtesy of Sam the Cooking Guy's cookbook)
One 15-ounce can whole kernel corn, drained really well
1tablespoon olive oil
1 red bell pepper, diced small
1/4 cup finely chopped cilantro
1/4 cup red onion, diced small
1/2 teaspoon to 1 teaspoon cayenne pepper
Juice from 1 lime
1/2 teaspoon kosher salt
4 ounces crumbled goat cheese
Heat one tablespoon of oil in a nonstick skillet on high and cook corn until really well cooked and black in spots-let cool. Put in a bowl. Add all remaining ingredients, mix well and serve.
If corn on the cob is in season, get 4 ears and brush them with olive oil and roast them on the grill. When corn is softened or nicely brown, let cool. The roasting could take 30 minutes. Cut the kernels off and put in bowl. Do this instead of using canned corn.
